Today’s Sunday lunch was uber-easy! I don’t know about you, but we are absolutely ravenous after church on Sunday (Why is that?). I get pretty excited about meals that can go in the crock pot when we leave for church and are ready to serve when we walk in the door. Today’s meal–Creamy Crock Pot Chicken Chili– is one of those!
The girls wanted me to make this for our church’s Soup Fellowship last week, but not knowing the setup, I wasn’t sure about taking something that came with a lot toppings. So instead I took Turkey Vegetable and Wild Rice Soup and promised the girls I would make the Chicken Chili soon. Then when I pulled the recipe this past week for a friend, it got my mouth watering and I knew this would be our next Sunday lunch!
Hmm, I was missing something green on top. Avocado, green onions, or cilantro would have made this!
Creamy Crock Pot Chicken Chili
1 can black beans
1 can corn, undrained
1 can Rotel, undrained
1 package ranch dressing mix
1 tsp. cumin
1 Tbsp. chili powder
1 tsp. onion powder
1 (8 oz) light cream cheese
2 chicken breasts
Drain and the rinse beans. Place the chicken in the bottom of the crock pot. Pour the undrained corn over the chicken, followed by the Rotel, and black beans. Add the seasonings and ranch mix. Stir together. Cut cream cheese into big chunks and place on top of chicken. Cover with lid and cook on high for 3-4 hours or low for 6-8 hours. Shred the chicken and stir. Serve with tortilla chips and toppings such as sour cream, shredded cheese, tomatoes, cilantro, avocado, green onion.

We veered away from our usual Sunday pie to finish the rest of Wilton’s birthday cake and ice cream.

And lest you think we eat like this all the time, I’m leaving you with some pictures of some of our weeknight meals. Sundays are for rich, heavy, high carb meals, and then it’s back to simple, healthy eating during the week.
We eat a lot of salads, chicken, and quinoa,
Egg whites and veggies,
turkey burgers, sweet potato fries, more salad,
grilled meats, roasted and steamed veggies, fruits,
and dried beans.
I really should start sharing some of our healthier recipes. I love eating this way and it makes Sunday lunch an even bigger treat. Maybe I’ll do a week of healthy recipe posts soon!
