I’m jumping on the blog for just a minute this afternoon to share a fun new recipe that we tried here at the house today. I told you last week that Sunday is PIE DAY for our fam. Well, since today’s menu was a Mexican meal, I went with a pie that offered an American favorite with a Mexican twist: Apple Pie Tacos!
Before I get to the dessert, I’d like to share a bit about our meal. When I was growing up, one of my favorite meals that my mom made was Mexican. Her Mexican Casserole–a layered dish of refried beans, chili, taco meat, shredded cheese, and crushed tortilla chips–always hit the spot! I vividly remember the cream colored dish she baked it in. It was deep and wide, brimming to the top with bubbly Mexican goodness and ready to feed our hungry group. She served it with yellow saffron rice, another side or two, sour cream and salsa. Delish! I made the same meal for our Sunday lunch today.
I got today’s dessert recipe from a friend at my chiropractor’s office. Yes. I’ve been going to my chiropractor for so many years that the women there are my friends! I love going in there! Those ladies always have a cute story, a recipe, or a cleaning tip to share (Did you know that Scrubbing Bubbles works great on cleaning baseboards?!). A couple months ago, Danielle told me about Apple Pie Tacos she’d made for a family gathering. She even pulled up photos on her phone to show me, and explained the entire process. I couldn’t wait to try them!
To start, cut circles from extra large tortillas. I found a bowl that allowed me to cut 3 circles from each tortilla. You could make then smaller if you want 4 out of each tortilla.
Brush both sides of the circles with melted butter, and sprinkle both sides with cinnamon sugar. Flip a muffin pan upside-down and place folded tortilla circles in between the muffin tins.
Bake at 400 degrees for 5-7 minutes. I checked them at 5 and went a couple more minutes.
They were crisp, crunchy, and sugary. Yum!
Fill each “taco shell” with apple pie filling. You can used canned or homemade. I had apples that were about to go bad so I simmered a filling last night and placed it in the fridge before bed.
Serve Apple Pie Tacos with Vanilla Ice Cream and a drizzle of caramel sauce.
It was soooo good! Try it!
