Joel works for a great company and with a fantastic team! To show my support for my hardworking husband and his devoted coworkers, I enjoy taking an occasional breakfast or lunch, or even just some cookies as a treat. Each week at the office, begins with a big Monday kick-off meeting. Since they have a new employee joining the team this week, Joel asked me if I would bring lunch yesterday, for their Monday meeting, and I was happy to oblige him!

Spinach Salad with Berries and Balsamic Vinaigrette
The Pork Sandwiches and Fingerling Potato Salad are recipes I’ve posted from my Biltmore Estate cookbook. I love that cookbook! (Click the highlighted links for the recipes). The only thing I did differently with the potato salad this time, was I did use fingerling potatoes and I made extra dressing to coat the potatoes more. Good improvements! Oh, and for the sandwiches, I found these amazing French Bread buns! They were outstanding!
For the salad, I layered spinach, chopped bacon, blueberries, blue cheese, and candied walnuts. A bottle of balsamic vinaigrette was the perfect dressing!
By now, you’ve seen my Apple Tea make its appearance on my blog a couple of times. I like to serve Apple Tea with salads and sandwiches. It just goes so well with those picnic-ish kinds of foods. It’s a refreshing blend of lemon and red zinger teas, diluted with apple juice!
This was an ideal menu for the office because the only thing that needed to be reheated was the pork. Everything else went from fridge to serving buffet.

BUT, what I’m most excited about is what the kids and I will be doing for school today- studying the Protestant Reformation! Do you know that exactly 500 years ago today, Martin Luther nailed his 95 theses against the sale of indulgences to the door of the Wittenburg’s Castle Church, sparking the start of the Protestant Reformation? Yes! So we’re dropping all other subjects today and going all history!
So, Happy 500th Anniversary of the Protestant Reformation!
