It’s Friday and you know what that means….
Pizza Night is almost here again!
For a twist on the standard pepperoni or sausage pizza, using all the same ingredients, try braiding your pizza! This has been a longtime favorite of Madeline’s and was her pizza pick for the week of her birthday. I’m passing this one on to you in case you need an idea for your next pizza night. You do have pizza nights at your house, right?
This is not as complicated as it might sound. Preheat the oven to 400 degrees. Simply roll out pizza dough to the usual thickness, but in the shape of a rectangle instead of a circle.
Next, visually divide the dough surface into three lengthwise sections, filling the middle section with any toppings you would usually put on a pizza, except for the pizza sauce. It varies depending on what I have on hand, but for these pizzas I spread some pesto on the middle section, followed by mozzarella, meat, parmesan, and Italian herbs. You could also add veggies, mushrooms, and other cheeses. I left the veggies out this time for the birthday girl.
For the outer third portions, use a rolling pizza cutter to make angled cuts down both sides. I make about eight cuts on each side.
Starting at the top, overlap alternating sides to enclose the toppings, which are now the…”middles”?
When you get down to the bottom, tuck the last two strips to secure for baking.
With a pastry brush, bathe the top with melted garlic butter, and give a good sprinkling of parm, herbs, and cracked pepper. If I have time I will let the braided pizza rise for a little while before baking, but if you have a hungry crew waiting, it won’t hurt anything to go ahead and pop it in the oven.
Baking time varies, but it will definitely take a little longer than a flat pizza. Just watch for the top to get golden.
Ahhh, out of the oven and ready to go into our mouths!

Slice into strips and dip in pizza sauce or marinara sauce.
And for the birthday dessert, Joel surprised Madeline by bringing home double doozies and ice cream! Yep, it was a good night!
